Cabernet Franc creates a medium-bodied wine with great structure, and is lighter in color and body than its genetic offspring Cabernet Sauvignon. Loved for its minty, savory flavors and mouthwatering taste, Cab Franc blends well with Cabernet Sauvignon, adding a slight floral quality. Cabernet Franc also makes for an exceptional standalone wine.
Villa San Juliette Vineyard, in the San Miguel District of the Paso Robles AVA, contains shale and calcareous soils rich in lime and chalk, with rocky formations along its rolling hills. This combined with huge diurnal temperature variation from hot days to cool nights allows fruit to ripen to its fullest potential.
In 2016, rainfall was higher than in the previous 5 years, bringing some relief to an ongoing drought. Temperatures on average were warm, producing grapes that were fully ripe and at an above-average crop size.
