While many wines are touted as being suitable “for” family gatherings, this medium-bodied wine (with great diversity among its appellations and grape varieties) is “like” a large family gathering. It has cherry and red plum aromas with suggestions of tobacco leaf, vanilla and zesty Earl Grey tea. Framed by firm tannins, balance acidity and a rich mouthfeel, the palate is layered with black cherry, blackberry, dark chocolate, mushroom, spice and toasted oak.
Mercury Rising, Cinnabar’s most popular wine, is a Bordeaux-style red cuvée. Vineyards are chosen for their favorable climate and soils, effective cultural practices, and history of producing quality fruit. In 2012, cabernet sauvignon, merlot, cabernet franc, petit verdot, malbec and petite sirah grapes were sourced from Paso Robles, Monterey, Sonoma County (Alexander Valley), the Red Hills of Lake County, and the Clements Hills above Lodi.
The varietal blend of Mercury Rising is fine-tuned with each vintage based on the strength of the individual components and how they contribute to the synergy of aroma, flavor, structure and mouthfeel. Lots are fermented and aged separately, then blended to create a dark, complex and elegant wine.
