Our proprietary red blend displays aromas of raspberry, chocolate covered blueberries, thyme and baking spice. Flavors of currants, smoked ham, leather and baked bread merge seamlessly into a finish of bright acidity, soft tannins and sweet toasted oak. — age for three to five years.
Mercury Rising, Cinnabar’s most popular wine, is a Bordeaux-style red cuvée. Vineyards are chosen for their favorable climate and soils, effective cultural practices, and history of producing quality fruit. In 2011, cabernet sauvignon, merlot, cabernet franc, petit verdot and malbec were sourced from the following California American Viticultural Areas (AVA): Sonoma County, Clear Lake, Lodi, and Paso Robles.
The varietal blend of Mercury Rising is fine-tuned with each vintage based on the character of the individual components and how they contribute to the synergy of aroma, flavor, structure and mouthfeel. Lots are fermented and aged separately, then blended to create a dark, complex and elegant wine.
Vintage 2011 began with a series of January storms followed by occasional warmth and rain through mid-March that transitioned to exceptionally cool and damp conditions in late April and parts of May. Temperatures were mild with a few heat spikes in July and August, but veraison was uniformly delayed because of the spring frost and cool summer. We harvested before the untimely storms in
September and October, but the vintage was saved by what initially jeopardized it: the frost and rain reduced crop size, allowing the remaining fruit to reach physiological maturity despite the cool summer.
